Microsoft has been very transparent about open source things and they’ve been trustworthy on that part of their work. Unlike with windows, but still.

TBH anyone can self-host his own git. The reason most open source projects live on github is because of the extra features (e.g. github actions builders), the readily available integrations, and the vast community. I don’t think the platform being owned by MS makes a difference.
That said; It is a good strategy to back up your repos somewhere locally. This saved me last August when github was offline for about an hour.

TBH I do like to use open-source services for my projects, however sometimes being easier to setup and use is a blessing, saved me a lot of headache.
