Struct and Methods in Rust.

I spent (wasted) 7 years working with Java and found the boilerplate code that OOP requires to be frustrating. Then I discovered functional programming (FP), which made me vastly more productive.
Can someone explain why structs and methods—essentially data structures that bind functions—are considered beneficial?
When you mutate your data, it can be easy to lose track of the changes. So why not keep data and functionality separate and maintain pure functions?
The only advantage I can think of is performance and memory efficiency. Otherwise, it feels similar to OOP, just without the complexity of inheritance.
