I am using REST Client for Visual Studio Code, it’s plain text file where you defined enpoint, haders and endpoints with variables and other. Very nice and simple.

Good list. For me it’s less about online vs offline and more about control. I used to use Postman and was very unhappy when they started gating features behind a login. I totally understand they need to generate revenue but it just was not for me. Today I create my own tools, mostly with VSCode RestClient and HTTPie.
